Loved this piece, but even more so because I was just there so I could truly visualize it, including my stop in Bónus while in Ísafjörður.
This line struck me, “There was no business plan, no concept, my parents were just making food,”…I had many conversations with Icelandic people while there but one stands out because they described an Icelandic motto essentially meaning, “it’ll work out.” He said many Icelandic people do not plan and just go with the flow trusting it’ll work. In Ísafjörður they could have no cruise ships one day, 6,000 people disembark the next day, and 10,000 later in the week
Thanks Julie! and yes so true, love that your chats with Icelanders showed a similar way of going about things over there. I was thinking about what it must be like to feel so...safe? secure? knowing that things will work out. I don't know, maybe I'm reading too much into it but in the US it feels like we've grown more risk averse over the years out of a general lack of security
The love of Bonus made me think of the east coast love of Wegmans
Yesss very similar to wegman’s!
A fun article, and it is cool to see it shown through the photos. But would Haukur rehire you, I wonder? 😏
I bet if they needed an extra pair of hands he might!

Oh, this is fabulous! What a meal it must be.
Thanks for reading Steve!
Certainly makes me want to plan a trip there. It looks wonderful!
What a beautiful piece, Skylar! And loved the read on Bonus and the local.
